Black Sugar Yogurt Muffins 黑糖酸奶鬆糕

 

Tastes of rich cocoa and minerals, Okinawa black sugar is definitely my favourite. I get this kind that comes in a mixture of powder and clumps, when used in baking it gives off little pockets of concentrated flavours, almost like a chocolate chip. The yogurt gives it extra moisture, and the oatmeal makes the texture fun. I heard the key to good muffins is not to over mix the ingredients, otherwise they develop a boring consistency and end up more like cupcakes.

Black Sugar Yogurt Muffins

Ingredients (makes 12):

Muffins:

  • 1cup All-purpose flour
  • 1cup Oatmeal
  • 1/2cup Okinawa black sugar (or the best quality available)
  • 1/2tsp Cinnamon
  • 1/2tsp Salt
  • 3/4tsp Baking powder
  • 1tsp Baking Soda
  • 1cup Yogurt
  • 6tbsp Butter
  • 1 Egg

Icing:

  • 1/2 cup Powdered sugar
  • 2tsp Milk
  • 1tsp Vanilla extract

Process:

  1. Mix all dry muffin ingredients in a bowl, slightly crushing the sugar into small clumps.
  2. In a separate bowl, mix yogurt, egg and melted butter well.
  3. Pour yogurt mix into bowl 1 and roughly mix into an uneven paste.
  4. Fill muffin tray to about 2/3 full and bake at 200ºC for 20mins.
  5. Make the icing: mix all ingredients to form a smooth paste.
  6. When muffins are done drizzle on icing and serve!

Mix dry ingredients well 干的食材混均勻

Mix wet ingredients well 濕的食材也混均勻

Mix dry and wet ingredients but not too much 乾濕一起不要混太勻喔

Fill tray to 2/3 full 裝至松糕盤2/3滿

Mix icing till smooth 糖霜要滑滑的

有著豐厚的可可和礦物味道的沖繩黑糖絕對是我的最愛。在這裡的超市可以買到一種大顆粒和粉狀混合的版本,在烘培的時候顆粒會融化成集中的焦糖味道,有點像朱古力的感覺。酸奶會令鬆糕內部特別的濕潤,而燕麥則會增加質感。聽說做好鬆糕最重要的是不要把材料混的太勻,否則鬆糕就沒有那麼“鬆”了,變成了小蛋糕。

黑糖酸奶鬆糕

食材(做12顆):

  • 1杯 麵粉
  • 1杯 燕麥片
  • 半杯 沖繩黑糖(或其他的高品質黑糖)
  • 半茶匙 肉桂粉
  • 半茶匙 鹽
  • 3/4茶匙 泡打粉
  • 一茶匙 小蘇打
  • 1杯 酸奶
  • 6湯匙 牛油
  • 1顆 蛋

糖霜:

  • 半杯 糖粉
  • 1茶匙 牛奶
  • 1茶匙 雲呢拿精華

做法:

  1. 將所有干的鬆糕食材在大碗裡混合,稍稍把大顆粒的黑糖壓碎成小顆粒。
  2. 在另外一個碗裡混合均勻酸奶,蛋和融化的牛油。
  3. 將酸奶混合物倒入麵粉混合物的碗裡,攪拌成不太均勻的麵漿(沒有乾粉狀就好,注意不要攪的太勻喔)。
  4. 將麵漿裝入鬆餅盤裡,2/3滿左右,200ºC烘培20分鐘。
  5. 做糖霜:將糖霜食材混合至均勻潤滑的膏狀。
  6. 鬆糕烤好後淋上糖霜即可。
