Just a handful, any kind of clams, simmering away with the chicken from the beginning to the end. The clams themselves will become rubbery and no good to eat, but they will have added such a subtle sweetness and complexity to the soup that you won’t miss them.
Dash of cream, a twist of salt, a sprinkling of Aleppo pepper and 2 drops of olive oil. A healing dinner is served.
