Sunday Night Chicken Soup

  
Nothing like a bowl of steamy chicken soup to ward off the flu, especially one that develops after a few too many wines out with friends. Especially one with a load of veggies and an over-generous splash of white wine. 

Garlic and onions, and whatever vegetables there is in the fridge, bay leaf, cinnamon stick, oregano and a good cup of white wine, chicken, water, now the secret ingredient of – 

Clams. 

Just a handful, any kind of clams, simmering away with the chicken from the beginning to the end. The clams themselves will become rubbery and no good to eat, but they will have added such a subtle sweetness and complexity to the soup that you won’t miss them. 

Dash of cream, a twist of salt, a sprinkling of Aleppo pepper and 2 drops of olive oil. A healing dinner is served.
